The bread journey continues!!….
This time doubling down on trying to understand better how to use #sourdoughstarter so IT WORKS!!
It can be finicky…. Or time consuming at least.
I Worked on really strengthening the starter for about two weeks (#fortnight)… untill it was really active and bubbly and stringy…
Used that In the mix and gave it plenty of time to bulk rise and proof…. All the time with fear that I may over prove it… but in the end… it passsed the finger test (we love the finger test) and it really sprang up nicely in the oven!
There’s so many timing variables… the only thing to do is to practice practice practice to get familiar with that dough at each stage of the process…. I’m still learning…

These honey and walnut cookies made with olive oil and winter spices are ALL over Greece over Christmas and winter- they’re hearty and sweetened only with honey- definitely different than our super white sugar sweet cookies in the states.
I like learning about how different cultures treat their sweets!
This is a good one! And they only get better the longer they sit in their honey syrup….. they’re soooo good.
